Chicken Noodle Stir Fry

Ingredients:

  • 1 pack of Loretta chicken-flavored noodles
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup mixed vegetables (e.g., peas, carrots, broccoli, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil (or cooking oil)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon ginger (minced, optional)
  • 2 green onions (sliced, for garnish)
  • 1 egg (optional, for scrambled addition)

Instructions:

  1. Cook the noodles:
    • Make the noodles according to the package instructions. Set aside.
  2. Cook the veggies and chicken:
    • Heat sesame oil in a large skillet or wok over medium-high heat.
    • Add garlic (and ginger if using) and stir-fry for 30 seconds.
    • Toss in the mixed vegetables and cooked chicken. Stir-fry for 2-3 minutes until heated through.
  3. Scramble the egg (if using):
    • Push the veggies and chicken to one side of the pan. Crack the egg into the empty side and scramble it until fully cooked, then mix with the veggies.
  4. Combine everything:
    • Add the noodles to the skillet and pour the soy sauce over everything. Toss well to combine, ensuring the noodles are evenly coated.
  5. Garnish and serve:
    • Sprinkle sliced green onions on top and serve hot.
