Ingredients:
- 1 1/2 cups instant oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup chopped nuts
- 1/4 cup dried fruits
- 1/4 cup dark chocolate chips (optional)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions:
- In a large mixing bowl, combine the instant oats, chopped nuts, dried fruits, and a pinch of salt. Mix well to evenly distribute the ingredients.
- In a microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave for 20-30 seconds or until the mixture is smooth and easy to stir. Add the vanilla extract and mix again.
- Pour the melted peanut butter mixture into the bowl with the dry ingredients. Stir until all the oats are fully coated, and everything is well combined.
- If you’re using chocolate chips, wait for the mixture to cool slightly before adding them to the mixture
- Line an 8×8-inch baking dish with parchment paper. Pour the oat mixture into the dish and press it down firmly using a spatula or the back of a spoon to create an even layer.
- Place the pan in the refrigerator for at least 2 hours, or until the mixture is firm enough to cut.
- Once the mixture is set, lift it out of the pan using the parchment paper. Place it on a cutting board and slice it into bars of your desired size.
- Store the energy bars in an airtight container at room temperature for up to a week, or in the refrigerator for a longer shelf life.
