Loretta Quick Oatmeal Snack Bars

Ingredients:

  • 1 1/2 cups instant oats
  • 1/2 cup peanut butter 
  • 1/4 cup honey or maple syrup
  • 1/4 cup chopped nuts
  • 1/4 cup dried fruits 
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. In a large mixing bowl, combine the instant oats, chopped nuts, dried fruits, and a pinch of salt. Mix well to evenly distribute the ingredients.
  2. In a microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave for 20-30 seconds or until the mixture is smooth and easy to stir. Add the vanilla extract and mix again.
  3. Pour the melted peanut butter mixture into the bowl with the dry ingredients. Stir until all the oats are fully coated, and everything is well combined.
  4. If you’re using chocolate chips, wait for the mixture to cool slightly before adding them to the mixture
  5. Line an 8×8-inch baking dish with parchment paper. Pour the oat mixture into the dish and press it down firmly using a spatula or the back of a spoon to create an even layer.
  6. Place the pan in the refrigerator for at least 2 hours, or until the mixture is firm enough to cut.
  7. Once the mixture is set, lift it out of the pan using the parchment paper. Place it on a cutting board and slice it into bars of your desired size.
  8. Store the energy bars in an airtight container at room temperature for up to a week, or in the refrigerator for a longer shelf life.
