- 2 10 oz. packages of Loretta Confetti Cupcake Mix
- 1/3 cup of vegetable or canola oil
- 2 large eggs
- 1 teaspoon of pure vanilla
Preheat the oven to 350°F. Combine all ingredients into a large bowl. Mix well with a wooden spoon or rubber spatula. Form into one inch balls. Place two inches apart on a parchment lined or ungreased cookie sheet. Flatten cookies to 1/4 inch with a glass or your hand. Bake for 8-10 minutes or until the edges just start to brown.
