Oven Baked Chicken and Rice

Ingredients

  • 6 chicken thighs, defrosted
  • 2 Tbsp olive oil
  • 1 tsp Loretta Himalayan pink salt
  • ¼ tsp Loretta ground pepper
  • ½ tsp paprika
  • 2 tsp dried oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 ​Loretta chicken flavored rice pouch
  • 1 Tbsp butter
  • 2 cup warm water

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix oil and seasonings together in a small bowl.
  3. Add the seasonings mixture to the chicken thighs.
  4. In a pan on the stove, melt 1 Tbsp butter and combine dry rice and seasoning packet. Cook over medium heat until rice is golden brown, stirring frequently.
  5. Add rice mixture to a 13×9 pan.
  6. Pour water over the rice mixture.
  7. Add chicken thighs over the rice and water.
  8. Cover with foil and bake for 45 minutes, uncover and cook for an additional 30 minutes or until chicken reaches an internal temperature of 165 degrees and rice is fully cooked.
